What each reading means for a fiddle leaf fig
A fiddle leaf fig wants water below 30% and starts staying wetter than it likes above 60%. On the 1–10 probe most people own, that works out like this.

The number depends on your soil, and most charts ignore that
A fiddle leaf fig is usually in well-draining potting mix with bark and perlite, in a pot only slightly larger than the root ball.
Fiddle leaf figs are usually in large pots relative to their roots, and that is where the meter matters most: the soil outside the root ball holds water the plant is not drinking, so a probe near the pot wall reads much wetter than the root zone the plant actually lives in. The difference between a reading taken two inches from the trunk and one taken at the rim can be four points on the same day.
Adjusting for your mix
Bark-amended mix in a snug pot: the range here applies and the pot dries predictably in about a week. Dense mix in an oversized pot: expect a permanently high reading at the rim and a much drier core — always probe near the trunk. Recently repotted: ignore readings for two to three weeks; the disturbed root ball and fresh mix will not behave.

Where to put the probe
Two to three inches out from the trunk, angled toward the center, about half the pot depth. This is the species where probe placement changes the answer most, because the root ball and the pot are usually different sizes. Take the reading at the trunk, not the rim, and take it in the same spot every time — the trend is worth more than any single number.
How a fiddle leaf fig actually fails
Inconsistency, more than any specific mistake. A fiddle leaf drops leaves in response to change — a swing from bone dry to soaked, a move across the room, a cold draft. The characteristic tell is dark brown or black spots spreading outward from the center or base of a leaf, which is the overwatering signature, versus crispy tan edges working inward from the margin, which is dryness or dry air. The two look nothing alike once you have seen both, and the meter tells you which story you are in before the spots appear.
Common situations
My fiddle leaf fig reads 3 near the trunk and 7 near the rim.
That is normal for this species in an oversized pot and the trunk reading is the one that counts. The rim soil has no roots in it, so it holds water and dries slowly while the root ball does the actual drinking. Two consequences: water at the trunk number, and consider a smaller pot at the next repot, because that permanently wet outer ring is a fungus gnat nursery and a slow rot risk.
Brown spots appeared and the meter reads 6.
Look at where the spots are. Dark spots with a soft or wet-looking margin, starting at the center or base of the leaf, at a 6 that has not fallen in a week, is overwatering and root stress — let the pot dry considerably further before the next watering. Dry tan crisping at the outer edges at the same 6 is more likely low humidity or a heat vent, and is not a watering problem at all. Treating the second as the first is how people overcorrect a fiddle leaf into a real root problem.
It dropped three leaves in a week and reads 2.
A hard dry-out will do this, and the drop usually comes a few days after the dry spell rather than during it. Water thoroughly until it runs from the drainage hole, then hold a steady cycle — the recovery mistake is to start watering little and often, which never rewets the core and keeps the plant oscillating. Consistency is the entire treatment for this species.
One reading can't be trusted. The curve can.
Everything above is really one argument: a single number from a cheap conductivity probe is not a measurement, it is a data point with a large error bar. Fertilizer salt raises it. Air gaps in chunky mix lower it. Probe depth moves it several points. Two meters in the same pot disagree.
What survives all of that is the trend. The same meter, in the same spot, in the same pot, read over a few weeks, tells you how fast this specific fiddle leaf fig in this specific mix in this specific room actually dries — and that is the thing that answers "do I water it", which no chart can do for you.
